Abundant August
Each week gets better and better!
It’s so much fun watching to see what you all are doing with your purchases.
Farmers market shopper Danielle Regan recently posted a wonderful pairing of market ingredients on social media.
“Tonight’s dinner was absolutely fantastic. I picked up some La Trafila lobster ravioli from the farmer’s market on Sunday. I also bought some cherry tomatoes, celery, shishito peppers, and fresh corn. I wanted to use them all with the ravioli for a summer twist.
I started by blistering the shishito peppers in a hot pan with avocado oil, finishing them with the ramp nettle salt, (check out Jody’s Kitchen for flavored salts.) and a squeeze of fresh lemon juice. Then I began cooking the halved cherry tomatoes with the corn, chiffonade celery leaves, smoked chili flakes, a good portion of brown butter, and sumac.
I boiled the lobster ravioli for the 2 minutes and removed, adding them to the pan with the veggies and browned butter. A good toss married the flavors together and coated the ravioli. After plating, I microplaned some milano salame (made with red wine) for some umami, and a touch of merlot bellavitano cheese. (R&M Farms has a wonderful cured sausage selection and Cooperstown Cheese is always happy to recommend the perfect cheese.)
This turned out so great. The layers of flavors and textures sang and complimented the lobster ravioli. My husband said it’s the best way he has eaten vegetables in a long time. He doesn’t even like cherry tomatoes or corn that much, but had a clean plate.”
These Seared Scallops with Summer Corn and Tomatoes are another way to use prime market ingredients. Pura Vida is renowned for their sweet and plump scallops.
Melons have arrived in a variety of colors and flavors. As with all seasonal produce, they shine on their own, but here are a few ideas you may also want to try.
Have you tried husk cherries? Also known as ground cherries, they grow on small shrubs and are similar in shape and size to a cherry tomato, but the fruit is covered by a thin, papery husk. The husk cherry has a taste referred to as sweet and tropical like a pineapple with an underlying tomato taste. Here are three very simple ideas to use your husk cherries.
Charlotte’s Home Kitchen is back with her creative designer garden touches to her regular and sampler size cakes. Nutmeg Cafe and Bakery also has their own take on “sweet veggies” and a myriad of other delicious sweets and savories.
See you on Sunday!
