so many squash...

Did you know that from a botanical standpoint squash is identified as a fruit because it contains the seeds of the plant? Fitting we speak of squash in this week of honoring indigenous people as that is who first cultivated it in this country centuries ago. It seems each year we see more varieties at the market, and because there are actually hundreds of types of squash that is probably true. A recent search found acorn, autumn frost, honeynut, butternut, delicata, sweet dumpling, kabocha, spaghetti squash, zucchini and several varieties of pumpkins and gourds among the tents of Berry Brook, Madura 
and Wrights. 

Here is a favorite fall squash recipe of mine:

BUTTERNUT SQUASH SOUP 

Serves 4-6    

                                         

1 medium sized butternut squash, peeled
& cut into 1 inch pieces (about 3 cups)

1 medium onion, chopped 

2-3 cloves garlic, chopped 

1 tsp ginger 

1 tsp curry powder

1 tsp salt

1 quart vegetable broth

1/2 of 14 oz can coconut milk

pepitas for garnish 

 

Bring all ingredients to boil, except coconut milk and pepitas. Once it comes to a boil reduce heat to medium low and simmer uncovered until squash is tender.

Add coconut milk and blend in food processor or blender.Make sure you blend in batches filling only half full, or use an immersion blender.

Start on low speed, so hot soup does not erupt and burn you. Blend until smooth, about 1 minute. Serve garnished with pepitas.
