Kale!

Among my favorite purchases from last week’s market were two bunches of kale from Halal Pastures Farm. Even though I chopped it to use in a simple salad with salt, pepper, olive oil, and beet hummus from Anthi’s Greek Specialties (good call!), it got me thinking about just how much you can do with these powerhouse greens! Lemon-garlic kale salad is an excellent place to start. There's something magical that happens when you combine lemon, garlic and kale: the greens lose all of their bitterness and well, righteousness.

For a protein-packed breakfast, try this coconut curry with greens and runny eggs for a greens-centric take on classic shakshuka. You can pick up some fresh ginger from Madura Farm and get creative with the citrusy herbs in Letterbox Farm’s summer tea mix to brighten up its kale and spinach base. You can also sautée kale and top it off with beautifully aged, grated cheese from Aux Bons Fromages to add some texture to a simple and fragrant spaghetti aglio e olio

As the market day goes on and inevitably heats up, I recommend a cup of ice cold raspberry summer lemon tea from Teagevity, a perfectly sweet bottle of Pisces Eclipse from Fairy Juice Bar, or a blended mocha frappuccino from Raw Chocolate Love. We tend to think of crèpes when we think of Escargot Voyageur but do try one of Chef Thierry's delicious quiches this week while you enjoy the Warren Banholzer band. They'll be playing sweet tunes from 10:30-12:30. Come and enjoy a lovely August market!
