Quick and delicious!
Many of us are extra busy in the fall as we adjust to new schedules, colder temps and that ever-present Hudson Valley Halloween craziness. As fun as it all is, my cooking routines can fall to the wayside while I get my bearings, so it can be nice to rely on quick, nourishing meals around this time of year. This flavorful sheet-pan roasted chicken from R&M Farms marinated with potatoes from Madura Farm in an herbaceous lemon juice, for example, requires only a few minutes of prep time before you’re digging into a well-balanced dinner.
For an even simpler dish, you can make this one-pot broccoli mac and cheese in the time it takes to make some from the box, and the tender, sweet broccoli florets from Caradonna Farm make the extra chopping totally worth the effort. Or, in just 20 minutes, you can make a winning combination of udon with honey-glazed Tivoli Mushrooms. A simple salad with greens from Halal Pastures Farm and basil - infused olive oil from Arlotta Food Studio is a go-to for me and helps add some bright green flavor to heavier cold-weather meals.
Or, if you want a salad with some fall flare, try this Brussels sprouts, apple and pomegranate salad.
