New Beginninngs!

Rosh Hashanah celebrates a fresh start. So does the change of season.
Fall has arrived with its morning air as crisp as blank page.

It comes late enough in the month that schedules have been set and settled and new routines established. We hope cooking from the market is a routine you are incorporating into your family life.

Vegetables taste so much better when they've been plucked from the earth just hours before the market bell. Apples are that much more flavorful, and prettier, when they've gone from tree in the orchard to wooden crate to market in less than 24 hours, without ever having sat on a long-haul truck across an interstate.

Apples are a symbolic part of any Rosh Hashanah celebration. Unlike other fruit trees which with foliage that shades their fruit, apple trees offer no such protection. Being different could make these trees vulnerable, yet they thrive —a sentiment that resonates with the Jewish people.

Honey is also key, as its ushers in a new year that is full of sweetness. Honey cakes are particularly popular. Try this red wine and honey cake with plums.

For something dramatic, cook a whole fish from Pura Vida Fishery. This week the Captain has reeled in some large red snappers and Black sea bass. Try this whole black sea bass with wild mushroom recipe. How convenient, the fish stall is right next to the Madura Farms tent, famous for their fabulous fungi.

For your vegetarian savory dish, consider making this couscous with seven vegetables. You can adapt the vegetable mix based on what's at market (the Patty Pans are looking so fetching). Did you know that the myriad couscous beads represent the amount of new blessing for the New Year?

Other things to look for at the market this week? The knife sharpener will be here to ensure you are not caught with a dull carving knife to cut into your whole fish, or to slice into the delicata squash at Deep Roots Farm.

Don't forget to buy coffee beans, too. Check out this article about Hector and Don Carvajal Coffee in Eater. His is the most buzzed about coffee ever!

See you at the market!
