Rosemary bagels and house-made Tahini at the market this week! 

Let's talk about breakfast. I firmly believe that one can and should eat a bagel at any time of day, and our friends at DoughCo Bagels can make that a reality for you. This week, bagel-meister Josh Small, who makes his bagels at 2 a.m., has been experimenting with lacing his pillowy bagels with rosemary. I also recommend picking up smoked salmon from Pura Vida to use in this recipe for a spicy smoked salmon "bento" bagel sandwich with cucumber salad in the week ahead.

One of our newer vendors, Anish Supreme Foods, will be selling homemade tahini at this week's market. Tahini is an absolute staple if you want to make hummus (although AYA Hummus has you covered this Sunday), creamy desserts, or any number of savory dishes like this vegan potato salad with tahini; it would be even more delicious with potatoes from Madura Farm and olive oil from Arlotta Food Studio. 

I haven't been able to keep my eyes off of Madura's selection of fresh carrots, which would create a delicious main ingredient in this roasted carrot soup along with ginger from Great Joy Family Farm

If you're looking for a well-balanced meal this week, try some bibimbap with beef, winter squash, spinach, and cucumber. Both R&M and FarmEats have grass-fed sirloin, while Caradonna Farm has winter squash, and 4E Green Farm has all kinds of nutrient-packed greens and flavorful bok choy Feel free to get creative and include any veggies that speak to you. 

To finish us off, why not combine some delicious gruyere from Cooperstown Cheese with chives from 4E Green Farm and eggs from R&M Farm in this gruyere and chive souffle? Or, if you're feeling sweet, use Caradonna's flavorful apple cider to make some apple cider-caramel dumplings for dessert.

We're thrilled that Eltee's Goods will be back with us this week serving up delicious "Tommy" tomato jam for you to elevate all of your sandwiches and cheese and charcuterie boards this week. And although many of our vendors will be inside the Main Street School, Pizza Vitale and XOLO Food Truck will be parked outside making authentic Neapolitan pizza and plant-based Mexican meals, respectively. What better place to stop for a brunch/lunch break than IFM?
