We’re (mostly) indoors this week! YAY!
Happy New Year! I hope everyone enjoyed a restful (or rambunctious) holiday and is ready to cozy up at ourindoor market this week.
Like so many of you, I’ve been trying to kick a serious cold for the past week or so, and the first thing I cooked for myself was a hearty bowl of zesty immune boosting soup. Packed with garlic, ginger, and nutrient-dense veggies, which you can find at Titusville, Madura, and Halal Pastures Farms, it’s been a fantastic companion. If you’re looking for a vegetarian option, my go-to recipe uses winter squash and rice instead of chicken and noodles, and it’s similar to this ginger-turmeric bone broth with greens. Of course, if you’re pressed for time, or don’t have the necessary ingredients at your fingertips, you can always pick up a hearty beef bone broth from Letterbox Farm: slow-simmered with organic, grass-fed bones from Grimaldi Farm Store, roasted tomatoes, veggies, lots of fresh herbs and sweet vermouth, this broth is perfect for sipping out of a mug or for making the French onion soup of your dreams.
They also make a fantastic Tonkotsu broth that is perfect for ramen. Add salmon or cod from Pura Vida or pork belly from R&M Farm. Don’t forget the magical medium soft-boiled ramen eggs - drop into boiling water and let simmer for six minutes. I usually riff my ramen, but here’s a recipe if you need one! Of course, the pre-mixed soups at The Lentil Co. need no recipes. In just a few minutes, you can have a hearty healthy meal at the ready.
